Description

Characteristics: Handcrafted from 100% goat's milk with French ferments.

Flavor: Complex, sweet, fresh and spreadable when young, intense when ripe. Depending on its degree of ripeness, it offers an infinite range of flavours.

Texture: Ivory-white paste, homogeneous, smooth and firm, sometimes brittle. It has edible fungus and ashes on its rind.

Region: Peace, Cordoba.

Maturation: Between 12 days and 2 months, between 7° and 15 °C, in our cellar.

Pairing: When young, it is recommended to use a dry white wine with good acidity. When mature, we recommend a smooth red wine, not aged in barrels, in the style of Pinot Noir.

Court: In small triangles.

Conservation: In Santi packaging, in the refrigerator. To enhance the flavor and aroma, remove from the refrigerator 30 minutes before consumption.

Presentation: Wrapped in SANTI silicone paper to retain moisture, in our special reusable container with zipper closure.
