Description
The green olive is characterized by its rounded shape and variable size, with a single seed that occupies the entire center of the fruit, and which is usually called a stone. Its green color is obtained by harvesting them before they ripen. At first they have a characteristic bitter taste, but this is eliminated by treatment in brine. In addition, they have large amounts of vitamins and minerals.
