Description
Characteristics: Made from cow's milk, this is a semi-cured cheese that is usually presented in the form of a large wheel with a rough, yellowish rind. This version is the most intense of the Raclette versions that we sell.
Taste: Slightly acidic and bitter, intense and creamy on the palate.
Texture: Rough surface, but with a semi-hard paste ideal for melting.
Region: Lincoln.
Maturation: 6 months in our cellar at 4°.
Pairing: Chardonnay, Sauvignon Blanc or Pinot Noir and Malbec.
Cut: In thin 2mm slices.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
