Description
Characteristics: It is a hard cheese, cylindrical in shape, in 16kg moulds, which varies its flavour and texture according to the different stages of ripening.
Taste: When young, its texture is flexible and pasty, and its flavour is slightly sweet. In its 18-month version, it has crystals and a gritty texture that is very pleasant to the palate, noticeably intensifying its flavour.
Texture: Compact, consistent and sandy. When ripe, it presents small crystals that dissolve in the mouth.
Region: Lincoln, Province of Buenos Aires.
Maturation: 8 to 18 months in our cellar.
Pairing: Chardonnay.
Cutting: Break up the shell into small irregular pieces with the tip of a knife.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
