Characteristics: Cheese with a creamy and smooth paste that is accompanied inside by a fine line of carob ash that gives it its particular flavor and personality.
Flavor: Smooth when young, Medium intensity when ripe.
Texture: Soft and creamy, the rind is flowery with a light, silky white down with striations, like velvet.
Region: Villa Maria, Cordoba.
Maturation: 30 to 45 days, between 4 and 7°, in our cellar
Pairing: Extra brut sparkling wines are an interesting option for this type of cheese.
Cut: In small triangular portions.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
