Description
Characteristics: Made from 100% sheep's milk in Las Flores, it is a semi-hard cheese aged for 4 months in our cellars and naturally smoked.
Taste: Medium intensity, pleasant aftertaste. The smoked flavour gives it complexity and character. Ideal to accompany quince, fresh pears or Spanish Serrano ham.
Texture: firm paste, aged for at least 4 months, with a semi-hard brown rind and a greyish-yellow paste. The texture is of low elasticity, slightly buttery and grainy.
Region: Las Flores, Province of Buenos Aires.
Maturation: 4 months in our cellars
Pairing: Pairs very well with a Cabernet Sauvignon.
Cut: into thin triangles 2mm thick.
Storage: in Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
