Characteristics: Made in Regio Emilia, Italy by the Consorzio Tutela del Parmigiano Reggiano with Denominazione d'Origine Protetta.
It is produced in 36 to 48 kilo molds and matures for 12 to 36 months. It is the Authentic Italian Parmigiano!
Taste: It has both sweet and salty flavours. The aftertaste is particularly marked by herbal and fruity aromas. Spicy and astringent notes are also noticeable, especially in the more aged cheeses.
Among the notes that are perceived in the mouth in combination with the aromas, there are hints of chocolate, nuts and fruits such as apple, banana and pineapple. The flavor is quite persistent and has a certain bitter touch at the end.
Texture: The texture of the cheese is slightly dry and grainy. being a cheese low in cholesterol. Its mass is compact, brittle, granular and with characteristic crystals.

Maturation: 24 to 36 months.
Pairing: It combines perfectly with a chardonnay aged in barrels.
Court: Break up the shell into small irregular pieces with the tip of a knife.
Conservation: In Santi packaging, in the refrigerator. To enhance the flavor and aroma, remove from the refrigerator 30 minutes before consumption.
