Description
Characteristics: Made with 50% cow's milk and 50% sheep's milk in Las Flores. It is a semi-hard cheese aged for 5 months in our cellars. An Argentine version of the Italian Pecorino, but with two types of milk.
Taste: Medium intensity, slightly spicy when cured. The two milks are perfectly perceived, each one providing its characteristic texture and flavour. Ideal to accompany quince, fresh pears or Spanish Serrano Ham.
Texture: Firm paste, aged for at least 4 months and semi-hard rind, paste of a greyish yellow colour. The texture is of low elasticity, slightly buttery and granular.
Region: Las Flores, Province of Buenos Aires.
Maturation: 4 months in our cellars
Pairing: Cabernet Sauvignon.
Cut: In thin triangles 2mm thick.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
