Characteristics: Hard, compact and consistent cheese.

Flavor: Characteristic aroma and slightly spicy flavor.

Texture: Compact, consistent, brittle fracture and fine grain.

Region: Tandil, Province of Buenos Aires.

Maturation: 120 days in our cellar between 15° and 17°.

Pairing: Full-bodied, barrel-aged red wines such as Cabernet Sauvignon or Malbec go well with this pairing.

Cutting: Break up the shell into small irregular pieces with the tip of a knife.

Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.

Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
