Description
Characteristics: Originating in Spain, made from 100% Manchega sheep's milk, it is considered one of the best sheep cheeses in the world.
Taste: Slightly acidic , strong and tasty, which becomes spicy in very aged cheeses. Pleasant and peculiar aftertaste given by sheep's milk. Ideal to accompany quince or Spanish Serrano ham.
Texture: Pressed paste, aged for a minimum of 6 months and a maximum of 2 years. Its rind is hard, pale yellow or greenish-black in colour. The texture is of low elasticity, with a buttery feel and usually grainy.
Region: La Mancha region, Spain.
Maturation: 6 months at Origin.
Pairing: Dry sparkling wine, red wines such as Tempranillo, Garnacha or Carignan.
Cut: In thin triangles 2mm thick.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
