Description
Characteristics: Produced in the plain of the PO River, Italy, supervised by the Consorzio per la Tutela del Formaggio Grana Padano.
It is produced in 36 to 48 kilo molds and matures for 12 to 36 months.
It is a skimmed, semi-fat, hard cheese.
The texture is finely grained.
Taste: It has both sweet and salty flavours. The flavour is intense, slightly spicy and extremely tasty, with herbal and fruity aromas. Spicy and astringent notes are also appreciated in the more mature cheeses.
Among the notes that are perceived in the mouth in combination with the aromas, there are hints of chocolate, nuts and fruits such as apple, banana and pineapple. The flavor is quite persistent and has a certain bitter touch at the end.
Texture: The texture of the cheese is slightly dry and it is a low cholesterol cheese. The paste is dark ivory yellow in colour. It has a fragrant and characteristic smell. Its mass is compact, brittle, granular and with characteristic crystals.
Region: Po Plain, Italy.
Maturation: 24 to 36 months.
Pairing: Pairs perfectly with a Chardonnay aged in barrels.
Cutting: Break up the shell into small irregular pieces with the tip of a knife.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
