Description
Features: Made from cow's milk and featuring distinctive holes, the lasts weigh over 40kg and are over 90cm in diameter.
Taste: Its flavour and aroma are mild, similar to that of walnuts . Its maturation period requires a minimum of sixty days from its manufacture.
Texture: Its paste is ivory to pale yellow in colour, with a soft texture and easy to cut. It is characterised by its round eyes formed by bubbles of carbon dioxide produced by fermentation, which are trapped during its preparation.
Region: Córdoba.
Maturation: In our cellar between 4° and 7° .
Pairing: Wine and cheese go hand in hand. In this case we suggest a Merlot, a Syrah, wines with good fruit. Dry whites also go perfectly.
Cutting: In straight slices, parallel to the face of the cheese .
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
