Description
Characteristics: Made with goat's milk, using traditional French recipes.
Taste: complex, slightly acidic and fresh when young. Depending on its degree of ripeness, it offers an infinite range of flavours.
Texture: Ivory-white paste, homogeneous, smooth and firm, sometimes brittle. It has edible fungus on the rind.
Region: La Paz, Cordoba.
Maturation: between 12 days minimum and 2 months, between 7° and 15 °C, in our cellar.
Pairing: when young with dry white wine, when more mature with a not too tannic red wine.
Cut: into small slices.
Storage: in Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
