Description
Varietal: 100% Arauco.
Arauco variety introduced 500 years ago on the coasts of Peru, later reaching Chile and Argentina where it was cultivated throughout the territory, particularly in the Cuyo region. Today it is considered native, being unknown in the Mediterranean area. This variety has been selected over time for its great adaptation and qualitative potential. Mendoza has the largest area cultivated with Arauco, which, due to its characteristics, is the emblematic variety of Argentine olive growing.
Late-ripening variety, harvested when the veraison has just begun, giving oils with a green and intense fruity profile. Notes of tomato, aromatic herbs and apple predominate, among others. The presence of a large amount of antioxidants in the variety is manifested in balanced bitter and spicy notes of medium to high intensity.
SCENT
Very aromatic variety. Notes of tomato and freshly cut grass.
FLAVOR
Complex and intense fruity aromas. Medium to medium-high bitterness and spiciness, depending on the level of ripeness.
