Description
Characteristics: Handcrafted from 100% goat's milk with French ferments, it is a cheese that is fresh on the palate and has a very pleasant acidity.
Flavor: Complex and intense when ripe. Depending on the degree of ripeness, it offers an infinite range of flavors and textures. Pasty when young. Creamy and with an intense aroma when ripe.
Texture: Ivory-white paste. It has a rind with white fungi that take on a golden color when ripe.
Region: Traslasierra, Córdoba.
Maturation: Between 12 days and 2 months, between 7° and 15 °C, in our cellar.
Pairing: When young, with dry white wine with good acidity. When mature, we suggest a smooth red wine, not aged in barrels, in the style of Pinot Noir.
Cut: In small triangles.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
