Description
Characteristics: In this 10-month-matured version we find a cheese with a more intense flavour and aroma. Its paste becomes more compact and less elastic.
Flavor: Thin crust, semi-hard and uniform paste with small holes. Smooth and slightly sticky texture.
Texture: Compact, consistent, somewhat brittle and friable on the palate.
Region: Tandil, Province of Buenos Aires.
Maturation: 300 days in our cellar between 4 and 8°.
Pairing: When combined with medium-intensity and delicate red wines such as a Merlot, the perfect harmony between the two is achieved.
Cutting: In rectangular portions of 2 or 3 mm thick.
Storage: In Santi packaging, in the refrigerator. To enhance the flavour and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to preserve moisture, in our special reusable container with zipper closure.
