Description
Characteristics: Made from goat's milk, semi-soft consistency, with characteristic green or blue-green veins. Intense aroma with pleasant mold notes.
Very intense and with an astringent and persistent flavor on the palate.
Flavor: Intense, spicy and with a persistent flavour. Excellent body, creaminess and fragrance.
Texture: Creamy and unctuous paste. It has a rough, irregular crust, inside which we can see the vertical veining produced by the Penicillium Roqueforti fungus.
Region: Córdoba.
Maturation: 150 days, between 4° and 8 °C, in our cellar.
Pairing: With sweet white wines such as Chardonnay. Another interesting option is the white Gewürztraminer variety with certain floral notes.
Cutting: It can be shelled by chopping it with a dull, round-tipped knife.
Conservation: In Santi packaging, in the refrigerator. To enhance the flavor and aroma, remove from the refrigerator 30 minutes before consumption.
Presentation: Wrapped in SANTI silicone paper to retain moisture, in our special reusable container with zipper closure.
