Santiago Valenti is the third generation of master cheese refiners.

With Italian roots and a passion for gastronomic culture, he inherited the trade from his father Remo and his grandfather Don Remo, who was a pioneer and benchmark for quality cheeses in Argentina with more than 60 years of experience in the country.

“When I was 16, after leaving school, I went to work at the Juramento and Ciudad de la Paz markets, as an adventure. I learned to cut cheeses, to differentiate them, I still remember the aromas, colors and flavors that I carry in my DNA,” says Santiago, who learned the trade that over the years would become his great passion.

Although he began his university studies with a degree in marketing, his passion for gastronomy was his great inspiration to continue the family legacy.

With 22 years of experience in the industry and great talent in his hands, Santiago is a good doer, detail-oriented and tirelessly dedicated when it comes to capturing his art on a cheese platter or enhancing the characteristics of each product thanks to the proper maturation that only his hands with “soul” know how to achieve.

“Travelling around Europe to continue training and learning about the cheese refiner’s trade nourished me and was a great motivation to reaffirm that I was on the right path, to be able to transmit all my knowledge and my love for the cheese industry, products so closely linked to my roots, to my family,” says Santi, very enthusiastic about his new venture with his partner and friend Diego Eddi.
